WHAT IS CIDER?
The term cider actually means two things here in North America. It can be Sweet Cider (Soft Cider) or Hard Cider.
Sweet cider is the raw fresh juice from pressed apples. It is usually a blend of apples produced from quality, clean apples picked from the tree. Hard cider is the alcoholic beverage produced by fermenting fresh sweet cider. In Europe and the United Kingdom, they simply call this cider! Learn more about the history of cider here.
At Spirit Tree Estate Cidery, our goal is to produce an array of quality beverages for the discriminating consumer, and reignite the passion for hard cider that has been evident since the 19th century.

Sweet (non-alcoholic) Ciders
Winner of 2011 & 2017 Ontario Sweet Cider Competition Our cider is made with only tree-picked apples and contains no dropped apples (apples that have fallen on the ground). The cider is treated with our Cidersure UV Processor prior to being bottled. We offer our traditional blended cider along with several single varietal ciders such as Crabapple and Gala in season.
Pressed on-site from a custom blend of tree-ripened 100% Ontario cider apple varieties. This delightfully refreshing non-alcoholic cider awakens your senses to experience the taste of a freshly picked apple. Available in a 750 ml bottle and 341 ml bottle.

Hard (alcoholic) Ciders
The Draught Cider is a traditional medium dry cider produced from a unique blend of Cortland, Gala, Golden Delicious, Northern Spy, Golden Russet and Chisel Jersey apples. It has a nose of green apple, spice and hay. The taste is bold and tart with a long finish hinting of cinnamon and nutmeg. Enjoy Spirit Tree Draught Cider on its own or with pub fare. 6% abv
Lightly fermented and unfiltered, the Applelager has a creamy, yeasty lager aroma. It is sweet with strong fresh apple characteristics and hints of caramel and orange. 3.5% abv
We have dry hopped our draught cider with a mixture of Ontario grown full cone dried Cascade and Chinook hops. The hops elevate the ciders fruit notes and add a grassiness to the aroma. The cider finishes with a balanced bitter astringency that appeals to cider & beer drinkers alike. 6.9% abv
Our Somerset-style Perry is lightly effervescent and hazy straw in colour. Semi-sweet with a floral citrus nose, it has canned pear flavours and a sharp finish. Try it with a cream sauce or soft ripened cheeses. 5.5% abv
A light, crisp, and refreshing drink. Our Apple Cranberry Spritzer is a blend of select apples and Ontario cranberries, pressed together at Spirit Tree and lightly fermented to create a sweet and tart rose cider for festive holidays and hot summer days. 2.5% abv Currently Unavailable
A medium roast French oak takes our Estate Reserve to a rich gold colour. The nose is boldly apple with a hint of spice and oak, while the taste is smooth, distinctly apple with white wine characteristics. It is medium bodied with a subtle oakiness. 8% abv

SPRING SEASONAL This unique blend brings our pear cider to the next level. A floral nose of lavender welcomes you to a smooth pear cider with a beautiful lavender finish. 5.5% abv Currently Unavailable
FALL SEASONAL This seasonal hard cider is made from pumpkins roasted in our wood fired oven, cinnamon, nutmeg and allspice all blended together with our fresh apple juice to taste like pumpkin pie in a bottle. 6% abv
WINTER SEASONAL The dark gold colour, caramel-orange flavour, and big alcohol of this heritage cider will warm our soul on a cold, winters day. As part of our seasonal series of ciders, Winter Bliss is our interpretation of the classic New England style ciders made by early settlers to the New York area of the New World. 6.5% abv Coming Soon!
